The Scotch Bonnet is one of the most iconic chilli varieties in the world, deeply rooted in Caribbean culture and cuisine, particularly in Jamaica. Named for its distinctive resemblance to a traditional Scottish tam o’ shanter bonnet, this variety has been cultivated for generations and is a cornerstone ingredient in many classic Caribbean dishes. While not part of the modern “superhot arms race,” it is still a seriously hot chilli—typically ranging from 100,000 to 350,000 Scoville Heat Units—placing it in a similar bracket to the Habanero, but widely regarded as having a superior, more complex flavour.

As a plant, Scotch Bonnet is a reliable and productive Capsicum chinense, forming a compact, bushy plant typically reaching 2–4 feet in height, making it well suited to both pots and greenhouse growing. The plants branch well and can produce heavy yields of pods throughout the season when grown in warm, sunny conditions. The fruits are distinctively squat and bonnet-shaped, often with a slightly flattened, lobed appearance, ripening from green through to vibrant shades of yellow, orange, or red depending on the strain. The flavour is what truly sets Scotch Bonnet apart—intensely fruity, sweet, and almost tropical, with a bright, aromatic quality that makes it indispensable in cooking. It delivers a strong, clean heat that enhances dishes rather than overwhelming them, making it one of the most sought-after chillies for both home growers and chefs.

Growing instructions

Start Scotch Bonnet early by sowing seeds indoors from January, using steady warmth and strong light to produce healthy, compact seedlings. Pot on gradually into a nutrient-rich, free-draining compost, ideally incorporating perlite to improve drainage and root development. Once established in the final pot, begin feeding with a tomato fertiliser after around two weeks and continue regularly through the growing season. Aim for a minimum 15-litre pot, though moving up to 20 litres or more will significantly improve plant size and yield, as a larger root system supports a larger, more productive plant. Although more compact than many superhots, Scotch Bonnet still benefits from support using canes, cages, or strings, particularly when laden with fruit. Grow in a warm, sunny, sheltered position—preferably in a greenhouse or polytunnel—water consistently without overwatering, and maintain good airflow to keep plants healthy and productive.

Scotch Bonnet’s excellent productivity makes it ideal for preserving, with freezing being the simplest method—store pods whole or chopped to retain their fresh, fruity heat. Drying (using a dehydrator or air fryer on dehydrate mode) produces flavourful flakes or powder, though this variety is especially prized when used fresh or preserved in wetter forms. It is perfect for fermentation, creating vibrant Caribbean-style hot sauces, and also works beautifully as a salted chilli mash or in pickled preparations for a sharp, tangy kick. In the kitchen, Scotch Bonnet is synonymous with Caribbean cuisine, forming the backbone of jerk marinades, pepper sauces, and traditional stews, where its fruity sweetness balances spices, herbs, and smoky flavours. It pairs exceptionally well with tropical ingredients such as mango, pineapple, and lime, making it ideal for chutneys, salsas, and marinades. Beyond traditional uses, it can elevate modern dishes—from spicy jams to infused oils—delivering a bold yet balanced heat with unmistakable character.
