Plant description
Aci Kil is a traditional Turkish chilli (Capsicum annuum) known for its long, slender fruits and excellent productivity. The plants are typically compact to medium in size, yet very heavy cropping, producing large numbers of thin, tapered pods that can reach 15–20cm in length. The chillies start green and mature to a glossy red, with many growers harvesting at both stages depending on use.
This variety is often compared to a cayenne in both shape and versatility, with a heat level ranging from medium to fairly hot depending on growing conditions. The fruits have a thin wall and a crisp texture when fresh, making them ideal for a wide range of culinary uses. Aci Kil is particularly valued for its reliability and heavy yields, performing well in greenhouses, polytunnels, or warm outdoor positions.

Growing instructions
Capsicum (chilli pepper) plants are easy and rewarding to grow with a little warmth and light. Sow seeds between January and April for a summer harvest, starting them off in a warm, bright spot to encourage strong germination and steady seedling growth. Once established and all risk of frost has passed, they can be moved outdoors, though they thrive just as well indoors year-round. Best Locations: Ideal for sunny patios, conservatories, or greenhouses. Plant in large pots (approximately 10 liter). Chilli plants thrive in well-drained soil in a sheltered, sunny position. With a bit of care, plants can be brought back indoors to extend the harvest, and as perennials, they can even produce for a second season. Recipes
Aci Kil is an incredibly versatile kitchen chilli and one we use in multiple ways throughout the season. The fruits can be harvested green for a slightly milder, fresher flavour or left to ripen red for more heat and depth.
Fresh, they are excellent sliced into salads, stir-fries, stews, and sauces, where they add a clean, cayenne-like heat without overpowering the dish. Their balanced flavour makes them particularly good in Mediterranean-style cooking, grilled meats, and tomato-based recipes. We also like roasting them on the barbecue and adding them to burgers and fresh salads.
For preserving, Aci Kil really comes into its own:
Freezing: Simply de-stem, wash, and freeze whole or chopped for year-round use.
Drying: The thin walls make these chillies perfect for air drying, after which they can be crushed into flakes or ground into a vibrant chilli powder.
Pickling: Their firm, crisp texture holds up well in brine, making them ideal for pickled rings or whole chillies.
Sauces: A great base for hot sauces, offering a classic chilli heat with a slightly fruity undertone.
This is a true all-rounder chilli—equally at home fresh, dried, frozen or preserved—making it a staple variety for both everyday cooking and batch preserving.
