Tapatio SALSA PICANTE Hot Sauce is a robust habanero sauce with great flavour that’s good for all round use.

The Tapatío Hot Sauce company was started in 1971 by Jose-Luis Saavedra Sr., in a 750-square-foot (70 m2) warehouse in Maywood, California.  In 1985, the company moved to a 8,500-square-foot (790 m2) facility in Vernon, California, 5 miles (8.0 km) from Downtown Los Angeles. Although larger than the first location, the new factory had a single loading dock and limited storage space, which created a new series of problems for the company. After a long search, a site was found for a developer to custom-build a new 30,000-square-foot (2,800 m2) facility, which Tapatío presently occupies. The new factory has several loading docks and automated production.

Saavedra was laid off from his job in 1971 and decided to give the hot sauce business a shot.  He began bottling the sauce by hand.  He struggled to get the sauce stocked and initially would leave it on consignment at markets in East Los Angeles, to be paid only if sold.  He finally caught a break when a local Japanese-owned grocery asked for 10 cases of 24 bottles, a massive order at the time.  His sauce was originally called “Cuervo” and Saavedra eventually sold the California distribution rights of the name to Jose Cuervo International Inc. and in 1975 he changed the name to Tapatio, a nickname for a person from Guadalajara in the Mexican state of Jalisco.  Today the company makes annual revenue of more than $11 million USD and Tapatio SALSA PICANTE Hot Sauce is sold across the United States and is exported to Mexico, Canada, Central America, Australia and the UK.

The ingredients, as listed on the product label, are water, red peppers, salt, spices, garlic, acetic acid, xanthan gum and sodium benzoate as a preservative. Tapatío comes in five sizes: 5, 10, and 32 US fluid ounces (150, 300, and 950 ml), and 1 U.S. gallon (3.8 liters), as well as in 1⁄4-ounce (7 g) packets. The sauce overall has a Scoville heat scale rating of 3,000, hotter than Sriracha.
