The Carolina Reaper is the hottest chilli in the world according to the Guinness Book of World Records. This title was snatched away from the Trinidad Scorpion in 2017 by Ed Currie’s Carolina Reaper, which averaged approximately 1.6 million Scoville. Despite the scorching heat you get from consuming a Carolina Reaper pepper, it does have a surprisingly fruity flavour. Reapers are super versatile; they can be dried, or simply added whole to spice up any dish. At the Ranch, we enjoy adding a single Reaper to large batches of pasta sauces; the large batch means the spice is not overwhelming, whilst still being able to enjoy the fruitiness of the Reaper.
