Santa Fe Grande is a classic American Capsicum annuum variety, believed to have originated in the southwestern United States, particularly around Texas and New Mexico. It is closely related to wax-type peppers and has long been valued for its reliability, adaptability, and excellent culinary versatility. Sometimes referred to as “güero” peppers in parts of the U.S., it has become a staple in home gardens thanks to its manageable heat and heavy yields.

The plant is compact and productive, typically growing to around 2–3 feet tall, making it ideal for pots, raised beds, or greenhouse growing. It produces abundant crops of short, conical pods (around 2–4 inches long) that ripen through a beautiful progression from pale yellow to orange and finally red. The fruits have relatively thick walls and a crisp texture, making them particularly well suited to a variety of uses. Heat levels are generally mild to moderate (around 500–5,000 SHU), with a bright, slightly sweet and tangy flavour that becomes richer as the fruit matures. This balance of flavour and heat makes Santa Fe Grande one of the most versatile chillies for everyday cooking.

Growing instructions

Start Santa Fe Grande early by sowing seeds indoors from January, using warmth and strong light to establish healthy seedlings. Pot on gradually into a nutrient-rich, free-draining compost, ideally mixed with perlite to support strong root development. Begin feeding with a tomato fertiliser around two weeks after moving into the final pot and continue regularly throughout the growing season. A minimum 15-litre pot is recommended, though larger pots (20 litres or more) will encourage bigger plants and heavier yields. Plants are naturally compact but highly productive, so provide light support using canes or small cages if branches become laden with fruit. Grow in a warm, sunny, sheltered position—greenhouse, polytunnel, or a bright outdoor spot—water consistently without overwatering, and maintain good airflow to keep plants healthy and productive.

Preserving & Recipe Ideas

Santa Fe Grande chillies are excellent for preserving and everyday cooking. They are particularly well suited to pickling, either whole or sliced into rings, where their crisp texture and tangy flavour really shine. They can also be roasted and frozen, dried for flakes or powder (though less common), or blended into sauces and salsas. Freezing whole or chopped pods is a simple and effective option for longer storage. In the kitchen, this variety is incredibly versatile—ideal for salsas, salads, sandwiches, and stuffing, thanks to its thicker flesh and manageable heat. It also works well roasted, grilled, or added to stews and Mexican-style dishes, delivering a bright, slightly sweet warmth that enhances dishes without overpowering them.
