NuMex Twilight is one of the most striking ornamental chilli varieties in the world, developed by the Chile Pepper Institute at New Mexico State University (NMSU)—the origin of all “NuMex” varieties. While often grown for its декоратив appeal, it is a fully edible Capsicum annuum with a fascinating backstory. The variety is believed to have originated from wild peppers found growing in Mexico, which were then brought to NMSU and carefully stabilised through selective breeding into the compact, highly ornamental plant we know today. The “NuMex” prefix itself is a mark of pedigree, with the institute having bred and named many varieties—often themed around American holidays, such as NuMex Halloween, NuMex Easter, and NuMex St Patrick’s Day.
The plant forms a compact, bushy habit, typically growing to around 1–2 feet tall, making it ideal for containers, patios, or windowsills. What makes NuMex Twilight truly special is its upright clusters of small, conical pods that ripen through a spectrum of colours—purple, yellow, orange, and finally red—all at the same time on the plant. This creates a stunning “rainbow” effect, often with dozens of fruits visible at once. The pods are relatively small but pack a surprising punch, typically in the 30,000–50,000 SHU range, similar to a cayenne. While the flavour is more functional than gourmet, the plant’s sheer beauty and productivity make it a favourite among growers looking for something both ornamental and edible.

5/10: Most sources quote 30,000-50,000 Scoville Heat Units. I would dare say they are probably a little hotter than that.
Growing instructions
Start NuMex Twilight early by sowing seeds indoors from January, using warmth and strong light to produce compact, healthy seedlings. Pot on gradually into a nutrient-rich, free-draining compost, ideally mixed with perlite to support strong root development. Once established in the final pot, begin feeding with a tomato fertiliser after around two weeks and continue regularly through the growing season. Although this is a smaller, ornamental variety, aim for at least a 10–15 litre pot to maximise growth and fruiting potential. Plants are naturally compact but may still benefit from light support with a small cane or frame, especially when heavily laden with fruit. Grow in a warm, sunny, sheltered position—indoors, on a patio, or in a greenhouse—water consistently without overwatering, and ensure good airflow to maintain plant health and vibrant fruit production.
Preserving & Recipe Ideas
While often grown for its ornamental value, NuMex Twilight produces plenty of usable chillies that can be easily preserved. Drying is one of the best methods—since these are very small pods they will dry completely by picking them at red and drying on a paper towel for about two weeks. Alternatively, use a dehydrator or air fryer on dehydrate mode to create small, intensely flavoured pods that can be crushed into flakes or powder. Freezing whole or chopped chillies is another simple option, while pickling works particularly well, showcasing their vibrant colours in jars. They can also be fermented into hot sauces or blended into chilli pastes for later use. In the kitchen, NuMex Twilight is best used where its moderate heat and visual appeal can shine—perfect for adding a pop of colour and spice to salsas, salads, and garnishes, or for infusing oils and vinegars. It can also be used in everyday cooking much like a cayenne, bringing a clean, sharp heat to sauces, stir-fries, and marinades, making it a versatile and decorative addition to the chilli grower’s collection.
