Carolina Reaper – Capsicum chinense

Plant description
The Carolina Reaper is one of the most famous chilli varieties in the world, renowned for both its extreme heat and distinctive appearance. Bred in South Carolina by Ed Currie of the PuckerButt Pepper Company, it was developed through careful selection and crossing of exceptionally hot Caribbean and South Asian chilli types, including a Pakistani Naga and a Red Habanero. In 2013, it was officially recognised by Guinness World Records as the hottest chilli in the world, with an average heat of over 1.5 million Scoville Heat Units and peaks exceeding 2.2 million SHU. Its rise cemented the global fascination with superhot chillies and pushed the boundaries of what was thought possible in chilli breeding.
The plant itself is a vigorous Capsicum chinense, producing medium-tall, bushy plants that thrive in warm, sheltered conditions such as greenhouses or polytunnels. Under optimal conditions, plants can reach 4–6 feet in height and develop a strong branching structure capable of supporting a heavy yield of pods. The fruits are instantly recognisable—small to medium-sized, heavily wrinkled, and typically ending in a pointed “stinger” tail, ripening from green to a deep, glossy red. Despite its fearsome heat, the Carolina Reaper has a surprisingly complex flavour profile, often described as sweet, fruity, and slightly smoky before the intense heat rapidly builds and lingers. With good care, plants are highly productive and will continue fruiting well into the season, making them a rewarding (if formidable) addition to any serious grower’s collection.

Growing instructions
Start Carolina Reaper early by sowing seeds indoors from January, using gentle heat and good light to establish strong seedlings before the season begins. Pot on gradually into a nutrient-rich, free-draining compost, ideally improved with perlite to boost aeration and root development. Once the plant is established in its final container, begin feeding with a balanced tomato feed after around two weeks, maintaining regular feeding through the growing season. For best results, use a large final pot—minimum 15 litres, though 20 litres or more is strongly recommended, as a bigger root system directly supports a larger, more productive plant. Given the right conditions, Carolina Reaper can grow into a large plant and develop into a substantial, shrub-like plant, so providing strong support is essential—use canes, strings, cages, or custom frames to guide vertical growth and prevent branches from snapping under the weight of heavy crops. Keep plants in a warm, sheltered, and sunny position (greenhouse or polytunnel is ideal), water consistently without waterlogging, and maintain good airflow to reduce stress and maximise yield.
Recipes
Due to the Carolina Reaper’s prolific yields and extreme potency, preserving the harvest is both practical and essential. Freezing is the simplest method—pods can be stored whole or chopped into portioned bags, retaining their heat and flavour for months. Drying is particularly popular, and we recommend using a dehydrator or an air fryer set to dehydrate mode to produce crisp pods that can be ground into a powerful powder or flakes. Reapers are also excellent for fermentation, creating deep, complex hot sauces when combined with salt and left to develop over several weeks. Alternatively, they can be blended into a salted chilli mash for refrigeration or freezing, or preserved through pickling for a sharp, fiery condiment. In the kitchen, Carolina Reaper is used sparingly but to great effect—ideal for crafting extreme hot sauces, adding depth to stews and curries, or creating bold chutneys and salsas often balanced with fruit such as mango or pineapple. Whether used fresh, dried, or fermented, a little goes a very long way, delivering both intense heat and a surprisingly rich, fruity character.
