Spinach (Spinacia oleracea) is a fast-growing, cool-season leafy green that has been cultivated for centuries, originating in ancient Persia before spreading across Europe and the world. It is prized for its tender, nutrient-rich leaves, packed with iron, vitamins, and antioxidants. The plant forms a low-growing rosette of smooth or slightly crinkled leaves, ranging from soft baby leaves to larger, more robust mature foliage. Depending on the variety, leaves can be rounded or pointed, with a deep green colour and a mild, slightly earthy flavour. Spinach is highly productive and well suited to successive sowing, providing regular harvests throughout the growing season, particularly in spring and autumn when temperatures are cooler.

Growing instructions

Spinach is best grown in cool conditions, making it ideal for spring and autumn crops in the UK. Sow seeds directly into fertile, moisture-retentive but well-draining soil, either in the ground, raised beds, or containers. Choose a sunny to partially shaded position, as too much heat can cause plants to bolt (run to seed). Keep the soil consistently moist and rich in nutrients, and consider adding compost before sowing. Thin seedlings to allow space for healthy growth, and harvest regularly by picking outer leaves to encourage continuous production. Successional sowing every few weeks will ensure a steady supply. Spinach grows quickly and can be ready for baby leaf harvest in as little as 3–4 weeks.

Preserving & Recipe Ideas

Spinach is best enjoyed fresh but can easily be preserved by blanching and freezing, which helps retain both colour and nutrients. It can also be sautéed and frozen in portions for quick use in meals. In the kitchen, spinach is incredibly versatile—perfect for salads, smoothies, stir-fries, curries, soups, and pasta dishes, or simply wilted with garlic and olive oil as a side. Baby leaves are ideal for fresh use, while larger leaves stand up well to cooking. Its mild flavour allows it to blend seamlessly into a wide range of dishes, adding both nutrition and colour.
