🌿 Spain’s Most Addictive Little Peppers – Mild, Moorish, and Occasionally Mischievous 🌿
These are the famous Pimientos de Padrón, the small green chillies that have become a Spanish tapas classic. Originating from the town of Padrón in Galicia, they’re traditionally fried in olive oil until blistered and sprinkled generously with flaky sea salt. Most are mild and full of rich, green pepper flavour — but every so often, you’ll meet one with a surprising kick! As the Spanish saying goes, “unos pican y otros no” — some are hot, and some are not.
Grown here in Bedfordshire, our Padróns are full of character this late in the season. Traditionally, these peppers are picked while still immature, at about one to two inches long — that’s what gives them their famously unpredictable heat, where roughly one in ten packs a punch. When left to grow, they can reach up to three inches in length, and as they mature, their flavour deepens and the likelihood of heat increases.
Because we’re nearing the end of the harvest, our pick will include a natural mix of sizes — some small and mild, others larger and a bit more daring. You may even find the odd ripe red pepper among them; these are rarely seen in markets but are a real treat, with a bold, fruity flavour and a definite warmth!
Perfect as a starter, side, or snack, these little peppers are superb fried or grilled — tossed in olive oil until blistered, finished with sea salt, and served straight from the pan. They also freeze well and can be roasted, preserved in oil, or added to sauces and chutneys to enjoy through the colder months.
